Vegan Cheesy Chili Mac
Ingredients:
1 lb chopped button mushrooms
1 large onion diced
4 cloves garlic minced
1 large 32 oz can diced tomatoes
2 Tbsp chili powder
1 Tbsp cumin
1 15 oz can dark kidney beans drained
1 15 oz can white kidney beans drained
4 cups not beef broth or vegetable broth (vegan)
10 oz elbow macaroni of your choosing
1/4 cup chopped pickled jalapeno
1 cup of vegan cheese sauce (a recipe below)
salt and pepper to taste
garnish with salsa, vegan sour cream, chopped tomatoes, pickled jalapenos, avocado, extra cheese sauce
Instructions:
In a large pot sweat down mushrooms, onions and garlic.
Add tomatoes, seasonings, beans, broth and macaroni. Let this cook until noodles are tender.
Add in pickled jalapenos and 1 cup or more of some vegan cheese sauce. Cook until desired temp.
Add in salt and pepper to taste. Top with lots of garnishes, whatever you like.

Vegan Cheese Sauce
This recipe based on Jill Mckeevers recipe
3/4 cup cashews , soaked 2 hrs and drained
2 tbsp miso paste optional
1/2 cup rolled oats
1/4 cup nutritional yeast
2 tablespoons cornstarch
1 packet of taco seasoning or just add your own spices
2 cups water
Blend all ingredients in vitamix until creamy, thick and warm.
