Spicy Bean and Sweet Potato Burgers
Ingredients:
½ cup fiber one cereal
1 tsp taco seasoning
1 medium baked sweet potato
1 (15.5oz) can cannellini or small butter beans drained really well
2 tblsp minced onion
1 clove minced garlic
1 medium grated carrot
1 tsp liquid smoke (optional)
1 tsp salt
½ tsp pepper
2 tblsp grapeseed oil or oil of choice
Grind fiber one cereal in a food processor until like fine bread crumbs. Place in large mixing bowl with taco seasoning. Mix well. Add all remaining ingredients. Use a fork to smash the beans (you can leave some whole if you wish). Form into 4 burger patties.
Heat a large skillet over medium heat and add oil. Add burgers to skillet carefully and do not move until they are fully cooked and golden on one side. About 5 or six minutes. Flip burgers and cook another 5 or six minutes on other side. Serve on bun of your choosing. I chose portabella mushroom caps.
